About Me

does your child need a doctor right now?

Having three kids under the age of six is quite exciting. We never have a dull moment in our house and often have injuries and illnesses that need to be tended to by a doctor. I have learned a lot over the past six years about when a child needs to be seen by a doctor immediately and when certain things can wait until their regular pediatrician is available. I created this blog to help other parents learn about the injuries and illnesses that their children may experience when a doctor isn't available to take a child to whenever these things happen.

Two Great Heart-Healthy Recipes

One of the most important things you can do for your heart is to eat properly. Maintaining a healthy diet is the most important way you can stay in good health. Additionally, eating heart-healthy foods can help to improve your cholesterol and protect your arteries from plaques and other blockages that can put you in the hospital. These foods include lots of omega-3 fatty acids that can lower triglycerides and other bad cholesterol in your arteries. Here are two recipes that will help keep you and your heart in great shape.

Grilled Salmon

  • 1⁄4 cup of kosher salt
  • 1/2 tablespoon of dried basil
  • 1/2 tablespoon of fresh ground black pepper
  • 1 crushed bay leaf
  • 1 teaspoon of garlic powder
  • 1 teaspoon of onion powder
  • 1 teaspoon of dried thyme
  • A dash of cayenne pepper
  • 1 medium white onion
  • 1 lemon
  • 1 salmon, boned, filleted, and split (about 2 pounds of filets)
  • Extra virgin olive oil

Combine the salt, basil, garlic powder, onion powder, thyme, cayenne pepper, bay leaf, and pepper in a blender and pulse the ingredients together until combined. Put the salmon filets on a piece of tinfoil, leaving plenty of room on the sides. Coat the salmon with extra virgin olive oil and sprinkle the seasoning mixture on the filets.

Cut the lemon and onion into slices and lay them over the salmon. Use another piece of tinfoil and seal the salmon in the two pieces of foil. Place the salmon in a 350 degree oven and cook for 20 minutes. Remove the salmon and open the tinfoil pouch. Pull the fish off the skin and serve immediately.

Salmon Fish Tacos

  • 1 teaspoon of cumin
  • 1 teaspoon of kosher salt
  • 1/2 teaspoon of fresh ground black pepper
  • 1/2 teaspoon of paprika
  • 1 pound of salmon filets
  • 12 6-inch corn tortillas
  • 1 cup of cabbage, shredded
  • 1/2 cup of Roma tomatoes, chopped
  • 1 tablespoon of jalapeno slices
  • 3 tablespoons of chopped red onion

Combine the onion, tomatoes, jalapeno, and cabbage in a bowl and set aside. Coat the salmon filets in salt, pepper, cumin, and paprika and pan fry in 1 tablespoon of extra virgin olive oil. Once it is cooked through and crispy on both sides, remove from the heat. This should take approximately 7 minutes. In another pan, warm the corn tortillas. When they are warm, lay down 2 tortillas on top of each other and place 1/6th of the salmon on top of it. Add 1/6th of the cabbage mixture and repeat with the remaining plates. Serve it warm.
